Writes one complete backup of an installation while the gateway keeps serving: a consistent snapshot of the store, every configured CouchDB database, the bridge repositories and documents and the forge, with a manifest of every file's checksum and size. Each backup goes into a new timestamped directory under backup.dir, and backups beyond backup.keep are removed. Prove that a backup restores with saphan restore --drill.
